Banoffee Cheese Recipe

I’m truly a dessert girl and love desserts as much as the other girls’ saying, “there’s always room for dessert!”. The reason why I fell in love with Banoffee Cheese is the combination of all my favorites. Caramel, Cheese and cookies based dessert. This version of Banoffee Cheese Recipe is super easy. Even a rookie like me can make it! 

These are the Portuguese version of ingredients that I managed to get and the taste is delicious. I was standing in front of the supermarket rack just half hour to figure out which is dulce de leche and cream cheese. They are all in Portuguese. Ignore the rack display due to limited equipment but all my colleagues even Executive Chef said it’s delicious. 

Ingredients

  • 120 gram butter
  • 250 gram cookie crumbs (digestive biscuits)
  • 2 overripe bananas (size as picture)
  • 500 gram light cream cheese 
  • 400 gram dulce de leche (leite condensado cozido)

Method – All handmade without machine assistance.

  1. Mix crushed biscuit with the melted butter. Press the mixture into the base and sides of your pan. Chill in the fridge while you are preparing the banoffee mix. At least 30 mins to 1 hour.
  2. Mix the cream cheese with dulce de leche till smooth. Then add in the banana puree and mix well.
  3. Pour the banoffee mixture on top of the biscuit based pan and chill. The best to taste is the following day.
  4. You may choose to use grated dark chocolate and whipping cream as the topping. So you don’t see the cracked surface like mine. Add few pieces of cut bananas if you like. 

I’m sure your result will look much presentable than mine when you are using a proper pan for cake. You see! I don’t display flawless stuff and it’s okay if you would laugh on it! If you laughed, that’s mean I have successfully made another person happy. 🙂
